Hop On The Teff Trend

On the 2017 super-grain train.

The ancient grain teff is quickly becoming the new favorite of health-conscious consumers.

Teff is thought to have originated in Ethiopia around 4,000 b.c. (that’s old!) The tiny, gluten free grain is super high in calcium and is a great source of: protein, fiber, iron, thiamin.

A whole host of new products containing teff are hitting the market. Everything from pizza, to pastas, to brownies. If you want to tackle teff on your own. Cook 1 cup teff in 1 cup boiling water (6-7 min) and let stand (5 min). This creates crunchy kernels to sprinkle on soups or salads. Or boil 1 cup teff in 3 cups water (20 mins) for a porridge-like consistency.
