The folks at Del Monte, the California-based food company, have come up with a way to make your pineapple blush by genetically engineering it to produce lower levels of the enzymes that convert the pink pigment lycopene to the yellow pigment beta carotene. Lycopene is the same pigment that turns watermelons pink and tomatoes red. The FDA recently approved the product but it’s still unclear how health-conscious consumers and manufacturers will react to the GMO crop.
Scientifically proving it’s safety and sustainability would be a good start. If they do, we might have a new Instagram trend on our hands.
