Good, Fast and Easy Chicken Paillard and Greek Salad!

Get your Greek on with this easy Chicken Paillard and Greek salad!

First up: The chicken!

Season 2 boneless, skinless, thinly pounded chicken breasts with salt and pepper. Grill on hot pan for 2-5 minutes.

Next: Build your salad!

Toss into a salad bowl:

  • ½ cucumber, chopped
  • 1 minced garlic clove
  • 2 tbsp. of mint
  • 2 tbsp. of parsley
  • ½ red onion, thinly sliced
  • 2 tbsp. of capers
  • ¼ cup of crumbled feta cheese
  • ½ head of romaine lettuce – rinsed, dried and chopped
  • ¼ cup of sliced olives

Dress it up with:

  • 2 tbsp. of olive oil
  • 2 tbsp. of red wine vinegar

Salt and pepper to taste. Mix! Mix! Mix!

Plate chicken with Greek salad on top! Enjoy!
