Step #1: Turn up the heat
heat a nonstick pan on medium-high.
Step #2: Mix it up
In a bowl, whisk 4 eggs until they are completely blended. Season with salt and pepper.
Step #3: Shake it out
Heat up the pan to over medium.
Add to pan:
- 1 tsp of olive oil
- 1 tbsp butter
Once hot, pour in eggs. After a few seconds, using a rubber spatula, stir eggs in fast motion, cover top of the pan with eggs.
Step #4: Let’s roll
When the eggs are set on the outside but still soft on the inside, fold omelette in rolling motion onto a plate.
Step #5: Get your veggies going
use tomatoes and mushrooms, drizzle olive oil on top and season with salt and pepper. Bake in oven at375° F until veggies are toasted.
