Ahh! The famous sandwich. Since childhood, these mighty heroes have been in our lives, one way or another. Whether it was a grilled cheese with tomato soup for dinner or a peanut butter and jelly snack after school, sandwiches to the rescue! But now you’ve gotten older and you can’t enjoy some of those meaty, cheesy delights that you did before. Whether you choose to eat vegan for health, spiritual, moral or environmental reasons, don’t worry. These are easy vegan substitutions you can make without fuss.
I’m going to focus on sandwich classics but with a vegan twist. Hopefully you’ll realize that being vegan doesn’t mean giving up your favorite foods. It just means you have to be a little creative when it comes to substitutions. Here are a few simple but delicious vegan sandwiches to make at home so you’re never stuck without a snack that is good for both you and the planet.
1. Reuben a la vegan
Giving up meat, dairy and eggs doesn’t mean you need to give up delicious and decadent sandwiches. If you’ve never tried a vegan Reuben before, well there’s no day like today. You’ll need vegan mayo, Sriracha sauce (a staple), rye bread, tofu, avocado and lots and lots of sauerkraut. Put all the ingredients on the rye bread and then fry the monster in olive oil for a few minutes on each side. But be careful when flipping it because this sandwich can fall apart.
2. Vegan Sloppy Joes
Meat eaters aren’t the only ones that can get messy. This twist on the meat-filled sloppy sandwich uses green lentils, offering a smoky, savory and spicy, but healthy, meal. Cook the lentils while in another pan you combine oil, onions, garlic and bell peppers. Then add tomato sauce, coconut sugar, vegan Worcestershire sauce, chili powder, cumin and paprika. Once the lentils and vegetables are done, combine them together in the pan and voilà! You have the vegan filling for your sloppy Joe!

3. Tofu Salad Sandwich
This is a take on the well known egg salad sandwich. It’s astonishing how many foods tofu can replace and eggs is definitely one of them. To make this delicious sandwich, finely chop tofu and mix with vegan mayonnaise, chives, celery and mustard and put onto whole grain bread. You can always add a little turmeric if you want to get the yellow egg color but it’s not entirely necessary. To top it off, add a handful of alfalfa sprouts. Those things may not look like much but they sure offer a protein-packed punch.
4. Grilled Veggie
Now this sandwich can be made many different ways, depending on what vegetables you have at hand. I usually make this one at the end of the week when I am trying to use the last few vegetables in my fridge. You can use any, including eggplant, peppers, zucchini, onions, squash, lettuce, spinach, kale and tomatoes. Slice your veggies and toss them into a stir fry or bake them in the oven in either olive or coconut oil, depending on your mood. Add either hummus or vegan pesto onto the bread for that extra flavor.
5. PB and J with a Twist
For when you’re craving something a little sweeter, try a twist on the classic peanut butter and jelly. Earth Balance and MaraNatha both offer a delicious coconut almond butter that is to die for. Thinly slice up some bananas and then finish by adding agave nectar on top.
